Brewing Guides to a perfect cup of Coffee!

You need not go to a coffee shop to have a great cup of coffee.  You can do it at home or outdoors by simply having the roasted coffee beans you love and the right equipment.
In this guide we will show you how to make a perfect cup of coffee, suited to your taste.
Simply follow the 3 easy rules for better brewing and you will have the perfect cup of coffee that you’ve always wanted.  (1) Use quality ingredients; (2) Make extra effort by grinding the beans; (3) Use the right tools and equipment.

1

Pour Over

Pour over coffee brewing is by far the most simplest of all.

What you will need

  • Coffee Dripper
  • Coffee Filters
  • Kettle
  • Grinder
  • Scale or Scoop

 The Steps

  1. Bring at least 20 oz. of water to a boil.
  2. Grind coffee to a coarseness resembling sea salt.
  3. Place filter in the dripper
  4. Add the grounded coffee beans to the filter by tapping gently to level of the grounds.
  5. Begin pouring hot water over the coffee starting from the outer rim going to the center in spiral movement. Make sure the grounds is saturated.
  6. Repeat pouring in the water slowly but this time in reverse fashion beginning from the center to the outer rim.
  7. Wait for the water to drip until the drops interval is about 10 seconds.
  8. Enjoy!

2

chemex

Similar to a pour over brewing but a little more delicate.

What you will need

  • Chemex Carafe
  • Chemex Filters
  • Kettle
  • Grinder
  • Scale or Scoop

The Steps

  1. Weigh out coffe and grind to a coarseness like a sea salt.
  2. Unfold filter and place in your Chemex
  3. fully saturate the filter with warm water. Discard water through the spout when done.
  4. Pour ground coffee into the filter giving it a gentle shake to flatten the bed to allow an even pour.
  5. Pour hot water gently starting at the center going out to the rim.
  6. Pour water in a circular pattern starting in the center. Spiral out toward the edge of the slurry before spiraling back toward the middle.
  7. Allow water to drip through the grounds entirely.
  8. Enjoy!

3

aero press

AeroPress brewing you need a special equipment the AeroPress itself.

What you will need

  • AeroPress
  • AeroPress Filters
  • AeroPress funnel
  • Kettle
  • Grinder
  • Scale or Scoop
  • Stirring Tool

The Steps

  1. Bring 7 oz (200 g) of water to a boil. Weigh out 15–18 grams of coffee (depending on your preferred strength). Grind to a texture slightly finer than sea salt.
  2. Insert a paper filter into the AeroPress’s detachable plastic cap.
  3. Use some of your hot water to wet your filter and cap. It helps the filter adhere to the cap and heats up your brewing vessel.
  4. Assemble your AeroPress. Make sure the entire assembly is dry, since any residual moisture can compromise the device’s seal.
  5. Add your ground coffee. Be careful not to spill any grounds into the ring-shaped gutter at the top of the AeroPress.
  6. Add twice the weight of water than you have grounds (e.g., for 15 grams coffee, add 30 grams water). The water should be about 96 degrees C. Make sure the coffee is saturated evenly. Let it sit for 30 seconds.
  7. Use the remainder of the hot water to fill the chamber. Stir  grounds to agitate.
  8. Fasten the cap (make sure its tightly closed. Flip the whole assembly over, place it atop of your brew vessel. Begin applying downward pressure. Stop when you hear a hissing sound.
  9. Unscrew the cap, push the AeroPress interior section to pop out the filter and condensed ground.
  10. Enjoy.

4

Espresso

Espresso is a dark, concentrated coffee using enormous steam pressure from an expresso machine.

What you will need

  • Espresso Machine
  • Demitasse
  • Double basket, bottomless portafilter
  • Grinder
  • Scoop
  • Tamper

The Steps

  1. Remove your portafilter from the espresso machine’s grouphead.
  2. Purge your grouphead thoroughly with hot water.
  3. For a double shot, grind between 18–21 grams of coffee into your basket. Distribute the coffee by drawing a finger across it in a series of alternating swipes.
  4. Place your portafilter on a clean, flat surface and position your tamper level on top of the grounds. Apply enough pressure to seal the coffee evenly.  Give the tamper a gentle spin to smooth or polish the grounds for an even extraction.
  5. Position the portafilter in the grouphead and start your shot. We recommend pulling it into a pre-heated ceramic demitasse.
  6. Let the steaming hot water of the machine do the magic until you see “crema” (the bubbles of coffee dripping out from the grouphead.
  7. Pour in additional hot water to dilute the bitterness or taking it as it is straight from brewing as long as you can take on the strength of the brew.
  8. Enjoy!

5

cold Brew

A simple method for brewing iced coffee.

What you will need

  • Coffee
  • Cold Brew Bottle
  • Grinder
  • Scale or Scoop

Brewing Time

8-12 hours

The Steps

  1. Weigh 68 grams of coffee and grind on a coarse setting. The grounds should be about the size of kosher salt.
  2. Twist to open filter, then add coffee to bottom compartment. Reattach top of filter.
  3. Twist the filter into the top of the bottle.
  4. Attach filter and top of bottle to glass bottle base. Fill bottle to top square mark with cold, filtered water. Shake gently.
  5. Let brew for 8-12 hours.
  6. After 8-12 hours, gently shake to stir the coffee. Remove the filter.
  7. Place top of bottle back onto glass base, open spout, and pour over ice.
  8. Enjoy the delicious cold brew!

6

turkish brew

Turkish coffee – sharp, short and strong. It will get you going and satisfy your coffee craving all within seconds.

What you will need

  • Coffee
  • Ibrik (Turkish Coffee Brewer)
  • Grinder
  • Scale or Scoop

Brewing Time

5 minutes

The Steps

  1. Add 1½ “cups” of water per cup you are making to the ibrik. These are not measuring cups, though. Instead, use the small cup that will ultimately hold the coffee to measure out the water.
  2. For each cup of coffee you are making, add between one heaping teaspoon and one heaping tablespoon of the coffee grounds, depending on how strong you like it.
  3. Add the sugar to the ibrik, if desired. Stir the coffee and sugar until thoroughly mixed.
  4. Place the ibrik on your heat source over medium heat. This should be a steady process, not a rapid boil – boiling the coffee will turn it bitter.
  5. As the coffee approaches a boil, it will begin to form a dense, dark foam on top. Before it comes to a full rolling boil, remove it from the heat and use the spoon to place a small amount of foam in each of the cups.
  6. Return the ibrik to the heat and let it continue until it almost reaches a rolling boil.
  7. After removing the foam, bring the coffee to a boil and remove it from the heat before it boils over. Let it cool for 15 or 20 seconds and then return it to the heat, still full. Do this a third time if stronger coffee is desired. Then pour the coffee very slowly and gently into the cups.
  8. Enjoy!

7

siphon brew

Considered by many to be the coolest brewing method where you use pressure to pump the water upwards to the coffee ground and use gravity to flow the coffee brew downwards.

What you will need

  • Coffee
  • Grinder
  • Scale or Scoop
  • Siphon Set

Brew Time

2 – 3 minutes

The Steps

  1. Soak your filter in warm water. Drop it into the bottom of you siphon’s top component (hooper).
  2. Fill your siphon’s bottom component, or “bulb,” with 300 grams of hot water (about a 12-oz. cup’s worth).
  3. Insert the hopper, filter and all, into the bulb. You don’t have to press too hard; just make sure it’s securely and evenly in place. Position the entire assembly above your heat source.
  4. While the water is heating, measure out between 20-25 grams of coffee and grind it just little bit finer than you would for regular drip coffee.
  5. Soon, the water in the bulb will begin boiling and rise up into the hopper.
  6. Once the water has moved into the hopper, turn your heat source down so that the water is between 185-195 degrees F.
  7. Add your coffee, and gently (but thoroughly) submerge it with a bamboo paddle or butter knife.
  8. Let the coffee brew, undisturbed, for one minute and 10 seconds.
  9. In one brisk motion, remove your siphon from its heat source and give it ten stirs with a bamboo paddle.
  10. Your coffee should take another minute or so to draw downward and finally rest in the bulb.
  11. Remove the hopper and enjoy your coffee!

8

french press brew

Using a special type of coffee press the brew is dense and heavy with a lot of elegance into it.

What you will need

  • Coffee
  • French Press
  • Grinder
  • Scale or Scoop
  • Kettle

Brew Time

4 – 5 minutes

The Steps

  1. Bring enough water to fill the French press to a boil. For a 17-oz press, you’ll need about 350 grams (12 ounces).
  2. While the water is heating, grind your coffee. French press coffee calls for a coarse, even grind. We recommend starting with a 1:12 coffee-to-water ratio. If you’re using 350 grams of water, you’ll want 30 grams of coffee.
  3. To start, gently pour twice the amount of water than you have coffee onto your grounds. For example, if you have 30 grams of coffee, you’ll want to start with 60 grams of water.
  4. Give the grounds a gentle stir with a bamboo paddle or chopstick. Allow the coffee to bloom for 30 seconds.
  5. Pour the remaining water and place the lid gently on top of the grounds. Don’t plunge just yet. Let the coffee steep for four minutes. Four (4) minutes. Don’t guess!
  6. Press the filter down. If it’s hard to press, that means your grind is too fine; if the plunger “thunks” immediately down to the floor, it means your grind is too coarse.
  7. When you’ve finished pressing, serve the coffee immediately. Don’t let it sit, as this will cause it to continue brewing and over-extract.
  8. Enjoy!
